Røget ål med røræg

Ingredienser (4 personer)

VAREFORBRUG:

4 store stykker røget ål

1 salathoved

citronbåde

dild

TIL RØRÆG:

3 æg

3 spsk. fløde

salt

peber

1 spsk. smør eller margarine

Fremgangsmåde

1. Pisk æg og fløde forsigtigt sammen. Krydr forsigtigt.

2. Smelt fedtstoffet i en tykbundet gryde evt. teflonbelagt.

3. Kom æggemassen i gryden og lad den stivne ved svag varme under omrøring. Når røræggen er cremeagtig tages gryden fra varmen.

4. Lad røræggen svale af på en tallerken.

5. Anret de rensede ålestykker på salatblade og læg en skefuld røræg ved hvert stykke. Pynt med citronbåde og dild.

Kan serveres med: Groft rugbrød eller surbrød.

Tilberedningstid ca. 20 min.

 

Stegte ål med kartofler og persillesovs

Ingredienser (4 personer)

2 kg ål

ca. 75 g margarine

50 g rasp

50 g mel

1 æg

50 g smør

salt og peber

Tilbehør:

1 kg kogte kartofler

Persillesovs

Øl og snaps i rigelige mængder.

Finnerne klippes af de flåede ål, og de skæres i passende stykker Herefter vendes de i mælk, rulles i mel, vendes i et pisket æg og derefter i rasp med salt og peber. 50 gram margarine smeltes på panden Ålene steges heri til de er lysebrune. Samtidigt smeltes 50 gram smør i en bradepande ved 170 grader i ovnen. De stegte ålestykker lægges i bradepanden efterhånden som de er brune (ca. 15 min i ovnen).
