Ål i karry

 

Ingredienser (4 prs):
1½-2 kg. ål.
Panering:
1½-3 spsk. mel.
1 spsk. rasp.
½ spsk. salt.
Margarine til stegning (100 gr.).
Karrysauce:
25 gr. margarine.
3 spsk. groft hakket løg.
Ca. 2 spsk karry.
½ ltr. bouillon.
2 spsk. mel.
½ madæble (skåret i terninger).
1 spsk. creme fraiche.
Salt.
Pynt:
½ agurk skåret i fine terninger.
Tilbehør:
Ris.
Fremgangsmåde:
De rensede ål skæres i stykker på 5-6 cm. længde.
Ålene steges gyldne i margarine, 25 minutter i alt.
Tilsæt salt og peber.
Karrysuce:
Margarinen smeltes i en tykbundet gryde – det hakkede løg svitses et par minutter.
Karry tilsættes løgmassen og varmes igennem et par minutter under omrøring.
Bouillon tilsættes, og saucen koger 5 – 10 minutter ved svag varme, hvorefter den jævnes.
For at gøre saucen rund og blød i smagen tilsættes nu creme fraiche til sidst.
Smag til med salt og peber og evt. lidt mere karry.
Umiddelbart inden serveringen kommes det hakkede æble i saucen, og
der pyntes med den finthakkede agurk.
Til retten serveres der løse ris.
